Lamb
Our pedigree flock of Charollais Sheep produces home grown lamb, yearlings and mutton. We chose Charollais sheep breed because:
- The Charollais grows well, with a great visual meat conformation and full muscling (meaty chops rather than just bone!).
- A perfect lean meat production ratio – fat adds flavour, but nobody wants too much of it.
- The Charollais has an excellent flavour at all stages of production:
- Sweet grass reared lamb available from May onwards
- Yearlings with a true depth of flavour from January to April
- Full deeply flavoured mutton for unsurpassed richness are also available.
